Solar Pumpkin Bread

You have to give me credit for trying. After the last batch of bland banana bread (say that three times fast!), I wanted to try again to see if I could make a solar bread. I found a pumpkin bread recipe online that was originally for the crock pot, so I modified it and tried again. It worked! My kids devoured both loaves by the end of the day! It was a very moist and dense bread, and would have been great with a hot drink on a cold morning. (Not that we have those here…)

Solar Pumpkin Bread (with thanks to letsgetcrocking)

1/2 cup applesauce

3/4 cup brown sugar

1 mashed banana

1Tbsp flax plus 3 Tbsp water

15 oz can pumpkin puree

1.5 cups rice flour

1/2 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp ginger

1/4 tsp salt

1 tsp baking soda


Mix the wet ingredients together then stir in the dry ones. Bake in two greased loaf pans in the solar oven for about an hour and a half. They will be very moist when done, but should pull away from the sides of the pans. Cool on wire racks before slicing.
